Ohitashi - bracken
At first an edible wild plant is a bracken. At first a bracken is boiled greens with dressing.
- dashitsuyu (2 tablespoons soup stock and 1/2 tablespoons soy sauce)
- dried bonito flakes
- Wash a bunch of bracken well, put into container in order, sprinkle 1 teaspoon sodium bicarbonate "myouban" over the bracken and pour fully boiling water (See picture). Leave it alone until cool.
- Keep water drop one by one from faucet, soak bracken in water overnight.
- Cut bracken into 1 inch.
- Arrange bracken on serving plate and pour dashiwari. Garnish dried bonito flakes.
