Simmered sweet potato with raisin

Sour-sweetness of raisin strongly enhances sweetness of a sweet potato.



  1. Put raisin on colander and pour boiling water.
  2. Wash sweet potato, cut in round slices of 1/2 inch and soak in water for 10 minutes.
  3. Put sweet potato and raisin in pot, add 1 cup water.
  4. Simmer for 5 minutes over a high heat, add 1 tablespoon sugar, a pinch of salt and alittle of soy sauce, simmer again for 5 minutes over a low heat.
