Simmered flavored flatfish
It's nice to boiled salted and sweetened taste
- fillet of flatfish "karei"
- 2 inch by 2 inch Kombu
- sake, mirin, sugar, soy sauce, salt
- Put Kombu into pan and pour 1 cup sake and heat. When sake comes to boil, add 1/2 tablespoon sugar, 1 tablespoon mirin, a little of soy sauce and a pinch of salt.
- Boil again, put fillet of flatfish and cover with drop-lid and simmer for 10 minutes over a moderate heat with pour sauce over fillet sometimes.
